The simplest icing is a glacé icing, containing icing sugar and water. This can be flavored and colored as desired, for example by using lemon juice in place of the water. More complicated icings can be made by beating fat into icing sugar (as in butter cream), by melting fat and sugar together, by using egg whites (as in royal icing), and by adding other ingredients such as glycerin (as in fondant). Some icings can be made from combinations of sugar and cream cheeses, or by using ground almonds (as in marzipan).
Spiced or Pickled Cherries
Take the largest and freshest red cherries you can get, and pack them in glass fruit jars, stems and all. Put little splints of wood across the tops of the fruit to prevent rising to the top. To every quart of cherries allow a cup of best pickling vinegar, and to every three quarts of fruit one pound of sugar and three sticks of whole cinnamon bark and one-half ounce of cloves; this quantity of spices is for all of the fruit. Boil the vinegar and spices and sugar for five minutes steady; turn out into a covered stoneware vessel, cover, and let it get cold. Then pour over the fruit and repeat this process three days in succession. Remove the heads of the cloves, for they will turn the fruit black. You may strain the vinegar after the first boiling, so as to take out the spices, if you choose. Seal as you would other fruit. Be sure that the syrup is cold before you pour it over the cherries.
Cherry Licorice: A Sweet Memory

Being a fan of licorice myself, I was asked by a friend to try the best licorice that she had ever had. The flavor was cherry licorice and she said that it tasted like the sweetest cherry pie that she had ever had. Not being a fan of cherry pie or anything cherry for that matter, I was reluctant to try it. But to my delight, it was as good, if not better than what my friend had described.
To me, the best licorice needs to be chewy and so full of flavor that you can't help but eat piece after piece. What attracted me to the cherry was the deep flavor that it had along with the poppy red color. It wasn't only candy for the mouth, it was candy for the eyes as well. The chewiness was addicting and when my friend and I had eaten the whole bag, we were left wanting more.
Another aspect of this cherry licorice that I loved was its smell. The cherry aroma hits your nose well before the candy hits your taste buds. Right when the bag was opened, a deep, sweet, summery smell wafted into my nose and made me rethink my opposition against all things cherry . I started thinking about the cherry tree we had in our backyard when I was a kid. The cool breeze would make the leaves dance and the cherries would sway right along. I would lie beneath that tree in its refreshing shade and daydream about all the things a little girl daydreams about.
It's amazing where flavors and scents can lead you. But this licorice was so good that every time I have one, I am taken right back to that same spot under the cherry tree on that warm summer day. Now that is what I call a good piece of candy.
